This SoCal avocado ceviche combines citrus marinated shrimp with cucumber, red onions and diced California Avocado. Plantain chips are a nice accompaniment to the shrimp and avocado ceviche.

Ingredients
1 lb. fresh or frozen uncooked medium shrimp, tails removed, deveined and cut in half (thawed if frozen) 2 serrano chles, stemmed, seeded and minced 1 cucumber, seeded and minced 1/2 medium red onion, peeled and cut in 1/4 in. dice, divided 2/3 cup fresh lime juice 1/2 cup orange juice 1/3 cup lemon juice, optional 1/2 cup minced cilantro, optional, or to taste 1 tsp. seasoned salt, or to taste 2 ripe, Fresh California Avocados, seeded, peeled and cut in 1/4 in. diceInstructions
Instructions:
- In a large mixing bowl, place the shrimp, chiles, cucumber, half the onion and the juices. Gently mix and let marinate for at least 45 minutes to 2 hours and until the shrimp are opaque.
- Stir in the cilantro and salt and mix thoroughly. Gently fold in half the avocado.
- With a slotted spoon, place the ceviche in a serving dish, reserving the marinade.
- Pour the reserved marinade over the ceviche no more than half way up and discard the rest. Top the entire dish with the remaining diced onions and avocados and serve immediately.
Variations: Add diced tomatoes
Serving Suggestion: Serve with a side of tortilla chips or tostada shells.
Beverage Pairing: Skinny margarita or craft beer.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
