This festive red, white and blue salad is a delicious blend of savory and sweet from blue cheese and seasonal fresh berries. It’s has lot of good fats (mono and polyunsaturated fats) [Poly 2.5 g, Mono 17 g; high in vitamin C and an excellent source of fiber (32% DV), making it a good entrée of side dish for a healthful diet. Serve with berry-flavored seltzer.

For the dressing 1 large strawberry, hulled 4 Tbsp. olive oil 3 Tbsp. apple cider vinegar 1/4 cup chopped onion 1/4 tsp. stevia (or erythritol - equivalent of 2 tsp. sugar)* 1/8 tsp. salt For the salad 8 cups (lightly packed) baby mixed greens 1 ripe, Fresh California Avocado, seeded, peeled and diced 1/3 cup blue cheese, crumbled 1 cup hulled and sliced strawberries (about 6 medium) 1 cup blackberries (sliced in half if they're large)
  1. To make the dressing, combine the strawberry, olive oil, apple cider vinegar, onion, stevia, and salt in a blender. Blend about 30 seconds or until smooth.
  2. Combine the mixed greens and avocado in a mixing bowl. Pour the dressing over all and toss lightly to combine.
  3. Sprinkle the blue cheese, sliced strawberries and blackberries over the salad and toss lightly. Alternatively, arrange the blue cheese, strawberries and blackberries in three stripes over the greens and avocado.

*Note stevia brands vary in their sweetness. Use a smaller amount and adjust to taste up to the equivalent of 2 teaspoons sugar.

Serving Suggestion: To turn this into a heartier meal, top with grilled chicken or salmon; if desired, substitute raspberries and/or blueberries

Beverage Pairing: Berry-flavored seltzer

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
