Vegan Bacon California Avocado Guacamole Burger

12 | vegan burger patties, cooked to order | |
12 | vegan potato buns, toasted if desired | |
6 | cups | Fresh California Avocado Guacamole (42 oz.) (recipe follows) |
6 | oz. | vegan bacon bits, hickory style |
9 | oz. | butter lettuce |
10 | oz. | white onion, thinly sliced |
12 | oz. | vegan mayonnaise |
Fresh California Avocado Guacamole (Yield: 6 cups) | ||
6 | Fresh California Avocados, peeled, pitted | |
3 | Tbsp. | lime juice |
1 1/2 | cups | Roma tomatoes, seeded and finely chopped |
2 1/4 | cups | red onion, finely chopped |
3/4 | cup | cilantro, finely chopped |
As needed | Salt and black pepper, to taste |

Instructions
Fresh California Avocado Guacamole:
- Mix all ingredients together until slightly chunky.
Assemble:
- For each sandwich, spread 1 oz. vegan mayonnaise on the bottom bun.
- Top with 1 vegan burger patty, ½ cup guacamole, ½ oz. vegan bacon, ¾ oz. butter lettuce, ¾ oz. sliced onion, then the top bun.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
