Ingredients
2 ripe, Fresh California Avocados, seeded, peeled and halved 8 oz. smoked salmon 1 cup pickled onions 2 cups strawberries, washed and dried 1 cup sliced cucumbers 1 cup cherry tomatoes 6 hardboiled eggs, halved 4 slices gluten-free bread, toastedInstructions
- Place the whole avocado halves cut side down in the center of the board
- Fill three shallow bowls with the smoked salmon, pickled onions and strawberries. Place the bowls intermittently around the board.
- Evenly fill in the empty spaces with the cucumbers, cherry tomatoes and egg halves.
- Place toast around the edges of the board, or on the side.
- Serve immediately.
Serving Suggestion: While you can cut up and prepare some of the ingredients in advance to save some time, avoid preparing the avocado in advance to avoid browning.
