Ingredients
2 English muffins, split 4 slices Canadian bacon, (1-oz. each), warmed 4 eggs, poached 1 ripe, Fresh California Avocado, peeled, seeded and sliced 1 vine-ripened tomato, large, cut into 8 thin slices 1/2 cup prepared Hollandaise sauce, warmedInstructions
- Toast muffin halves.
- Cover each half with 1 slice Canadian bacon, 2 slices tomato, 1 egg, and 1/4 of the avocado slices.
- Spoon warm Hollandaise sauce over each California Eggs Benedict.
Serving Suggestion: Serve with fresh fruit.
Beverage Pairing: Orange juice or mimosa.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
