1 | ripe, Fresh California Avocado, peeled, seeded and sliced | |
1 | vine-ripened tomato, large, cut into 8 thin slices | |
1/2 | cup | prepared Hollandaise sauce, warmed |

Instructions
- Toast muffin halves.
- Cover each half with 1 slice Canadian bacon, 2 slices tomato, 1 egg, and 1/4 of the avocado slices.
- Spoon warm Hollandaise sauce over each California Eggs Benedict.
Serving Suggestion: Serve with fresh fruit.
Beverage Pairing: Orange juice or mimosa.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
