Eggs Benedict California style with fresh California Avocados and tomato, made easy with prepared Hollandaise sauce. Delicious and full of California Avocado nutrition, this salad provides a good source of fiber and an excellent source of B Vitamins: 25% DV/0.3 mg vitamin B1; 30% DV/0.2 mg vitamin B2; 45% DV/7 mg vitamin B3; 40% DV/2 mg vitamin B5; 20% DV/0.3 mg vitamin B6; and 20% DV/0.5 mcg vitamin B12.

2 English muffins, split 4 slices Canadian bacon, (1-oz. each), warmed 4 eggs, poached 1 ripe, Fresh California Avocado, peeled, seeded and sliced 1 vine-ripened tomato, large, cut into 8 thin slices 1/2 cup prepared Hollandaise sauce, warmed
  1. Toast muffin halves.
  2. Cover each half with 1 slice Canadian bacon, 2 slices tomato, 1 egg, and 1/4 of the avocado slices.
  3. Spoon warm Hollandaise sauce over each California Eggs Benedict.

Serving Suggestion: Serve with fresh fruit.

Beverage Pairing: Orange juice or mimosa.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
