Double Smashed Avocado Burgers with Hatch Chile Queso: 8 (4 oz.) ground beef burger patties 1 1/2 tsp. burger seasoning 4 brioche or multigrain burger buns California Avocado Hatch Chile Queso (make ahead) California Avocado Smash (make ahead) California Avocado Smash: 1 ripe, Fresh California Avocado, seeded, peeled and quartered 1/2 tsp. burger seasoning 1 Tbsp. lime juice, optional California Avocado Hatch Chile Queso: 1 oz. olive oil 2 roasted Hatch chiles* (mild or hot), stemmed, seeded and diced 12 oz. white queso sauce 1 ripe, Fresh California Avocado, seeded, peeled and dicedInstructions
Double Smashed Avocado Burgers with Hatch Chile Queso:
- Preheat the surface of a griddle or cast iron skillet to medium-high.
- Season one side of the patties with burger seasoning and place on the griddle. Using a press or spatula, smash the patties to ¼” thick, then flip them and season the smashed sides. Cook until desired doneness.
- Toast the buns, if desired. Spread California Avocado Smash on each of the top buns. Stack two patties on each of the bottom buns.
- Top the burgers with the California Hatch Chile Queso. Add the top buns with the California Avocado Smash and serve.
California Avocado Smash:
- Season the avocados with the burger seasoning and lime juice. Use a fork to smash and combine the avocado mixture, leaving it a little chunky. Set aside.
California Avocado Hatch Chile Queso:
- In a saucepan on medium heat add the oil and bring to a sizzle, add in the Hatch chiles and let sear for 30 seconds.
- Stir in the premade queso sauce and gently mix in the avocado. Set aside until serving.
Variations: Sub veggie patties, add sides, add sliced cheese between the burger patties.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
